Sweet potato is just one of those foods ya know? Versatile, comforting & so nutrient dense. I love ’em mashed, baked, boiled, but my recent favourite is toasted. Yes, that’s right… Sweet potato in a toaster. BAM. It’s such a quick and easy snack or meal and the perfect option for those of you staying away from grains, like I do.
So, what’s so great about an orange potata? They’re packed full of benefits:
- mega high in beta-carotene (one of the most powerful antioxidants)
- regulates blood sugar levels
- rich in Vitamin A & C, potassium, and manganese
- low on the Glycemic Index
Sweet Potato Toast 4 Ways
Here are my favourite ways to have sweet potato toast! All of the recipes are VEGAN, PALEO & GLUTEN FREE. Holla!
SWEET POTATO TOAST
1 sweet potato
cut sweet potato length-wise, about 1/4″ thick for each slice
pop into toaster on highest setting for approximately 5 minutes
add a topping of your choice from below & enjoy!
CHOCOLATE SPREAD TOAST
- 1/4 cup shelled hemp seeds
- 1/4 cup raw cocoa powder
- 1/4 cup coconut butter or oil
- 2 Tbsp maple syrup
place all ingredients into food processor and blend until smooth
- 1/2 avocado, sliced
- 4 soaked walnuts
- sprinkle of chili flakes
CASHEW BUTTER & BANANA TOAST
- 1 Tbsp cashew butter (preferably homemade)
- 1/4 banana, sliced
- sprinkle of chia seeds
place all ingredients (except for greens) into a saucepan and stir over low heat until well combined
garnish with leeks or green onion
