Food Prepping | Salad-In-A-Jar & Smoothie-To-Go

Last year I met the wonderful and energetic Mirjam Blanken during my studies. Mirjam is an orthomolecular therapist and the founder of www.eatpurelove.nl. She loves good food and creates the most beautiful healthy recipes (gluten free, dairy free and sugar free!) on her website. I love food with lots of colors. (Or with lots of chocolate ;) ) So I made a colorful Red Beet Smoothie with raw cacao and a Thai Rainbow Salad in a jar. Foodprepping is my new thing. When I have a busy day ahead I just make some extra dinner and take the leftovers with me in a jar so I have a perfect lunch!

 

RED BEET SMOOTHIE

This smoothie is the perfect pre-workout treat. Red beet contains nitrate and has a positive effect on your endurance.

Ingredients
1 apple
1 red beet (raw)
1 banana
250ml almond milk
3 tbsp raw cacaopowder
1 tsp coconut sugar

Preparation
Just put all ingredients in a blender and blend away!
 
 

THAI RAINBOW SALAD IN A JAR

I’m a huge peanutbutterlover. So I made a peanutbutter dressing with this salad.

SALAD

Ingredients*
300 gram organic chicken
sesame seeds
handful of cashew nuts
bell pepper
carrots
spring onion
salad of choice
red cole
radish
cucumber
* I didn’t add any amounts for the veggies. Just choose whatever you like!

DRESSING

Ingredients
1/4 cup peanutbutter
1 tbsp soy sauce
1 tbsp honey
lime juice
1 tbsp sesam oil
1 tsp garam masala
optional: a little water

Preparation
Mix the ingredients well in the blender.

These colors look great on a plate! When you take your salad to go, then only add the dressing right before you start eating.
