This easy 2-ingredient gluten free recipe will kickstart your metabolism and give you enough fuel for a productive day.

Ingredients
  • 1 banana
  • 2 eggs, slightly beaten
  • ----------------------------------------------
  • From your pantry:
  • coconut oil (to bake in)
  • ----------------------------------------------
  • Topping (optional):
  • blueberries or mango
  • full fat organic yoghurt (e.g. sheep)
  • unsweetened shredded coconut
  • raw honey
Instructions
  1. In a bowl, mash the banana with a fork. Add the eggs and mix well.
  2. Heat a spoonful of coconut oil in the frying pan. Add 3 tablespoons of the mixture for each pancake at the same time. When the pancakes are firm on top, carefully flip them over and bake the other side for 1 minute.
  3. Put your pancakes on a plate and top with fruit and/or yoghurt.
