These 2-ingredient pancakes will provide you with everything you need to start a successful day. They’re gluten-free and literally the easiest recipe you’ll ever make. No way you can go wrong with these!
Every morning you have two choices: continue to sleep with your dreams, or to wake up and chase them.
YOUR 2-INGREDIENT PANCAKES BREAKFAST RECIPE
- 1 banana
- 2 eggs, slightly beaten
- ----------------------------------------------
- From your pantry:
- coconut oil (to bake in)
- ----------------------------------------------
- Topping (optional):
- blueberries or mango
- full fat organic yoghurt (e.g. sheep)
- unsweetened shredded coconut
- raw honey
- In a bowl, mash the banana with a fork. Add the eggs and mix well.
- Heat a spoonful of coconut oil in the frying pan. Add 3 tablespoons of the mixture for each pancake at the same time. When the pancakes are firm on top, carefully flip them over and bake the other side for 1 minute.
- Put your pancakes on a plate and top with fruit and/or yoghurt.
